Briefly soaked in press. Fermented in clay amphora with M yeast, 8 months aging on fine lees with occasional battonage. Full malolactic. Cross-flow filtered at 0.2 micron.
Flavour Affinities
Seared cod with fennel and peaches, hummus, grilled asparagus, creamy orzo and tofu souvlaki, rabbit rillettes, roasted quail, butter chicken, crab cakes.
Vibe
Electrifying, layered, invigorating. Oyster shell, peach yogurt, brined citrus zest.
Vintage Report
An aridly dry and surprisingly hot spring preceded a summer filled with rainfall. Disease pressures required careful management, but persistent growers were rewarded with a sunny and temperate harvest season with ideal conditions.
