Alchemy
Barrel fermented in 500L puncheons with varying yeasts: CY, CH, CH9, VL2, X16. Aged 12 months on lees in barrel. Full malolactic. Cross-flow filtered at 0.2 micron.
Flavour Affinities
Spaghetti carbonara, butter-poached halibut, oysters rockefeller, zucchini ravioli and lemon zest, thai green curry with shrimp, manchego, gruyere.
Vibe
Lucious, opulent, elegant. Honeyed oats, apple crumble, meyer lemon.
Vintage Report
An aridly dry and surprisingly hot spring preceded a summer filled with rainfall. Disease pressures required careful management, but persistent growers were rewarded with a sunny and temperate harvest season with ideal conditions.
