Alchemy
Cold-soaked for a few hours of skin contact. Fermented in clay amphora with M yeast. Aged 8 months on fine lees, occasional battonage. Full malolactic fermentation. Cross-flow filtered at 0.2 micron.
Flavour Affinities
Seared cod with fennel and peaches, hummus, grilled asparagus, creamy orzo and tofu souvlaki, rabbit rillettes, roasted quail, butter chicken, crab cakes.
Vibe
Plush, layered, invigorating. Oyster shell, peach yogurt, brined citrus zest.
Vintage Report
The year of the "winter that never happened." An extremely mild winter ended abruptly, prompting an early start and warm spring. Persistent rain and summer heat brought disease pressure, but diligent growers were rewarded with strong yields, quality fruit, and generous hang-time into fall.
